Meanwhile, I received the best cookbook EVER at Christmas (Thank you Mr. & Mrs. Weeks!!) Perfect for my busy schedule :)
Today Im enjoying the spinach-mushroom wrap with cheddar cheese on a whole-grain spinach tortilla. It's all healthy and delicious. Speaking of which...since Christmas, I've been concentrating on eating whole foods and always enjoying some fruit or vegis with every meal. Yesterday night, I forgot my burrito in the work fridge..so I went to a corner deli and ordered the "Vegi Sandwich" : Fresh Mozzarella and Avocado with onion, lettuce, tomato and mayo on roll. Cheese and Avocado: yum. Mayo, white onion, pink-ish/ orange tomato and iceberg lettuce, ugha. Not to mention the refined white flour roll. Wow. I can't believe how much my tastes have changed in just a few weeks! I still love chocolate and muffins and things..and im sure not on any diet. Im just trying to avoid trans fats and overly processed foods with extra sugars and salt. (For instance, I gave up Skippy for some brand of natural peanut butter. Interestingly enough, the natural PB cost only as much as the Skippy! I was very surprised at not having to pay more.)
Ive also tried to drink more water and make one huge mug of tea from 1 tea bag instead of 2-3 cups of tea from 203 teabags over the course of the morning.
Fresh groceries and eating out cost about the same in NYC, and it's only recently that I've been able to afford to eat "well" (by my standards). Unfortunate.
